What inspired you to start Red Wolfe Patisserie?

Ever since my mom and I made our first cheesecake (me at age 13), I became fascinated in turning combinations of food ingredients into baking creations that delight and surprise.

What’s your favorite thing to bake—and why?

Baking pies and tarts are my favorite challenges. I see them as the ultimate tight-rope test to achieve a balanced experience. Whether its a fruit pie or cream tart, each bite should give a continuous contrast: the flaky, buttery crust of a pie, or for a tart, a crisp, sweet crust; the warmth of the fruit or a rich, creamy filling - all combined to leave you wanting just a little bit more!

What do you hope people feel when they taste your pastries?

I want people to feel delighted eating a delicious pastry and surprised that even though they’ve had the pastry before, somewhere else, the taste and quality comes through.

What skill or character trait do you think is most important for a food entrepreneur?

Like other industries, a customer centric focus is critical in succeeding, especially in a made-to-order business.

What’s been the biggest surprise since starting your business?

I am surprised and fortunate to have many people who are willing to help, selflessly, my business succeed. Without my community’s strong shoulders or helping hands, I would not be in the fortunate position that I am today. I’ve met so many lovely people since I’ve started and it truly makes it a pleasure to work.

What are your dreams for Red Wolfe Patisserie?

Although I didn’t think I would want to open my own shop, someday I would love to make that a reality.

What excites you about being part of Rising Kitchens?

I’m thrilled to have the opportunity to work with all the talented people of Rising Kitchens. They provide the insight, support, and education to continue to learn and grow as an entrepreneur.
